Pickled Onions, How do I Love Thee.

The titillating joy of pickled red onion. Yes, I did say pickled red onion. If you have never tried it then you are missing one of the great joys of life. The tickle on your tongue and the amazing flavor it gives every single thing you put it on. I am in love in case you hadn't noticed.
It all started with a simple recipe and led me to one of the culinary loves of my life. It all makes sense now, my fondness for simple cooking, my love for all things tangy and something that I can tweak to whatever whim my cooking soul wants to do that day. The real beauty of pickled red onions is there is no wrong way to make them.
Here is the original recipe I used and loved every mouthful.

On to the best part, it is completely flexible to what your personal preferences are or what is in your spice collection or even what you plan on using them on. There is no wrong answer. The wilder you go the more pleasantly surprised you will be. Such delicious examples are substituting star anise and cinnamon stick with some peppercorns and a sprig of rosemary. Even as simple as adding cumin.
Whatever way your taste buds send you, the lucky morsel you top with this splendid object of my affection will pop. One of my favorite and simple ways to serve the pickled onions is on warm toasted crusty bread slice topped with the pickled onions and goat cheese. Just remembering it makes me want to leap up out of my seat and make more this very second. Boo raves about a lot of the creations I send out of my kitchen but this one made him stop and say "Mmmmmmm". To me, that is a success. I had moments of orgasmic pleasures with the first bite to the last. I would gladly share it with you just remember to BYOF.

Go, make and enjoy.
